But these recipes were achievable and also something I'd be excited to try to make again at home.

If, like me, you're still a little blown away by the fact that anyone is shelling out $11,000 a night for a room on a cruise ship, one other thing to remember is the Regent Suite comes with a lot of extras. Some seven-night Miami-based sailings go for as low as $3,700 per person based on double occupancy. The newest of the ships, the 2003-built Seven Seas Voyager, measures 42,363 tons, which is about 12% smaller than the slightly older, 48,075-ton Seven Seas Mariner. In an effort to improve passenger flow, for instance, Regent turned around the grand staircase in the central atrium on Seven Seas Splendor as compared to how it was laid out on Seven Seas Explorer. A major focal point of the vessel's interior, the staircase now cascades down from the public areas on Deck 5 toward the magnificent, marble-floored promenade on Deck 4.

Grandeur just finished out its first run about the Caribbean during mostly sold-out itineraries from PortMiami and is now amid a set of Mediterranean voyages for summer 2024. It will then make its way to New York for fall color itineraries of Canada and New England in September and October and then return to Miami to begin the winter Caribbean sailing season into 2025. A big draw to Regent is the mostly inclusive offerings, including free and unlimited shore excursions, round-trip flights, unlimited internet, prepaid gratuities, ground transfers and other amenities. All three of the ships also have an elaborate Serene Spa & Wellness Center with treatment rooms and a relaxation room.

All passengers regardless of their home country, citizenship or country of residency are responsible for obtaining the proper documentation for travel. This includes passports and visas for any country they may visit during their trip. The Grandeur hosts twice-daily classes on sea days and a single late-day class when ships are in port.

It began operating just a few years after the founding of luxury cruise competitors Crystal Cruises (now reborn as Crystal) and Seabourn.

Stephano also leads culinary safaris ashore, such as a visit to a spice market in Belize made earlier this year. "Look at that view behind you," Montague said, pointing to floor-to-ceiling windows framing a vast expanse of island-dotted water (the suite unveiling was taking place during a short sneak-peek sailing for travel agents from Miami to the Bahamas). "You're going to wake up [to a view of] a different port almost every day." It’s a welcome and fitting addition to the dragon and prayer wheel sculptures on its two sister ships. All three ships in the Explorer class are about 55,500 gross tons, with Grandeur sporting a 744-guest capacity among its all-suite offerings. The line has three older ships and just had two larger vessels ordered by parent company Norwegian Cruise Line Holdings, but they are not due until 2026 and 2029.

The master bath also has a walk-in shower so big that we suspect a couple of the other writers at Sunday's event got lost inside and are still there. Notably, the shower has a floor-to-ceiling glass wall overlooking the ocean. The super-pricey bed is within the Regent Suite's master bedroom area, which is the centerpiece of the complex. In addition to a main bedroom and adjacent lounge space, there's a massive master bathroom that doubles as a personal spa, complete with its own sauna and steam room.

The pinnacle of sailing options is the 4,443-square-foot Regent Suite at $11,000 a night. It features a $200,000 Hästens Vividus custom handmade mattress, an in-suite spa retreat with a personal sauna and steam room and 270-degree views from the ship’s bow from a 1,292-square-foot wraparound veranda. Those passengers get their own butler and personal car and driver in every port.

Regent isn't the only cruise line with culinary class kitchens, but having taken classes on both the Explorer and the Grandeur -- and on quite a few other ships -- I find Regent's to be among the best. The 18-station version onboard the Grandeur, and the classes it offered, did not disappoint during a two-night cruise from Miami in January. As Montague noted, there aren't any super suites on land where you can get a sweeping view of a different iconic destination -- Monaco, Portofino, Venice -- every few days. "It's unique," Regent president and CEO Jason Montague said of the suite when I asked him where he thinks it falls among the list of top suites at sea. "There's nothing like it, not just in the cruise industry but the overall [travel] industry."
